Well... that's not strictly true. Any given number in theory is no better or worse than another... but in practice when the board is laid out there are often tiles that are more desirable than others, and thus particular numbers that are "better" than others. They won't be the same every time, and it will always change by the tile layout, but you can still get screwed somewhat by rolling a number that doesn't work for you.
The neat thing about the game is the ways that you can compensate for bad rolls, plan ahead etc. There are workers, as mentioned, that let you modify die rolls, some building give you extra workers, some buildings let you take other things without needing a die, you can buy buildings from the market that will often allow you to compensate for a bad roll, you can trash a die to get more workers, you can place a building instead of taking something else (hopefully you build out your estate so that you are near to almost every number), etc.
