Most of what you've heard is true, except this:-More thematic than (most) other Feld games.
I'd say it's the opposite. CoB is one of the least thematic games of Feld (who of course isn't famous for theme in his games in the first place).
Castles of Burgundy is my and my wife's favorite game and Feld is my favorite designer. I won't say that CoB just doesn't suit your taste, because I do love most of the games that you mentioned, and I love CoB so much that I can almost assure you - if you're into euros and don't mind dice, there is not reason for you not to like CoB. Just give it couple more tries.
